The Department of Marine Catering and Hotel Management organized a one-day workshop on
“Cuisine Française” on 28.08.2026. A total of 66 students from the second and third years of
MCHM actively participated in the workshop. Mr. Santhosh S., Head of the Department,
Annamal Institute of Hotel Management, Ramnad , served as the resource person for the
workshop. He demonstrated the preparation of an elaborate eight-course French meal and
provided students with valuable insights into French culinary techniques and practices. A brief
and informative presentation on French culinary traditions, customs, and gastronomic culture was
also given by the chefs. The participating students had the opportunity to gain practical exposure
by trying their hands at the preparation of selected French dishes under the guidance and
supervision of the kitchen staff. The workshop provided an engaging platform for students to
learn about French cuisine through both theoretical and practical experiences. It was an interesting
and enriching programme that offered valuable learning opportunities for both students and
faculty members.
